Eddie Merlot's Truffle Butter

Just in time for grilling season, Chef Matt Strabbing of Eddie Merlot's In Bloomfield Hills shares tips on how to cook a great steak at home.

Know what you're buying and talk with your butcher
Before you begin grilling, bring steaks to room temperature - pull steaks from the fridge an hour before you're going to grill
Be sure to clean and oil the grill before cooking
Oil the steak and season heavily
Rest steaks at least five minutes before slicing, the bigger steaks the longer the rest time

Eddie Merlot's Truffle Butter
makes 2 oz. for two steaks


2 sticks of butter
1 oz. of black truffle peelings, minced 
½ cup of truffle oil
1½ tsp. salt and pepper mixed
2 tablespoons of fresh chives, minced


In an electric mixer, combine all ingredients. Using the paddle attachment, beat for 2 minutes on medium speed or until smooth.
