Sweet Lorraine's French toast & homemade granola

Homemade Granola

Yield: 3/4 gallon
Preheat oven to 350F degrees

Ingredients:

3/4 cup canola oil
1 cup brown sugar
1/2 cup honey
3 cups old fashioned oats, do not use quick oats
3/4 cup sweetened, flaked coconut
3/4 cup walnut pieces
1 cup almond slices
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
pinch ground allspice
1 cup golden raisins
1/2 cup dried cranberries

Method:

combine canola oil, sugar & honey in a sauce pan. heat over medium heat to boil
turn down heat and simmer for 5-7 minutes until combined. set aside
combine all nuts, spices and coconut with oats
pour butter-sugar mixture over oat mix, make sure oats are well coated
place onto parchment lined sheet pans, spread evenly, not more than 1/2 inch thick
bake in a pre-heated 350F oven for 8-10 minutes or until well toasted
stir the granola several times, so that it cooks evenly
remove from oven and let cool
place in large stainless steel bowl and stir in raisins and cranberries. store in plastic bowls

Mother's Day French Toast

Yield: 8 thick french toast slices
Preheat oven to 325F degrees

Ingredients:

1 quart milk, Thomas Organic whole milk preferred
5 eggs, organic or cage-free preferred
1/3 cup granulated sugar
1 tsp vanilla extract
8 one inch thick slices of Texas Toast, Challah or Brioche bread

Method:

in a big bowl, whip together the milk, eggs, sugar and vanilla. set aside
place bread slices on a shallow sheet pan and evenly cover with mixture from above
allow the bread to soak in mixture for 5-10 minutes
turn the bread over and allow it to soak for an additional 5-10 minutes
line two cookie sheet pans with parchment paper and spray with vegetable oil spray
place the bread in a single layer on the pans
bake in a preheated oven 325F degrees for 10-12 minutes until set and let cool
you can refrigerate the partially baked french toast for up to two days
when ready to serve, preheat oven to 450F degrees and warm for 5-10 minutes
