Lakeview sandwich shop never has waste: Recycle, compost or reuse

'Sandwich Me In' is a small shop in the Lakeview neighborhood on Clark Street. There are dozens of items on the menu, and guess what, there's no garbage to take out.

So, forks, spoons, plates and knives… "All that stuff, the parchment paper we use, anything we use that is packaging material in the restaurant is compostable or biogradeble,” said ‘Sandwich Me In’ owner Vrany.

Vrany said it's been that way since he opened two years ago. He's only been left with eight gallons of garbage, and most of that stuff came from customers carrying in other coffee cups or food items.

On average, that's what most restaurants in Chicago leave behind every other hour.

So, how does the owner here keep his trash to almost nothing? Vrany said all of the garbage is compostable, and the paper that sandwiches are wrapped and served on is made out of corn soy.

“So we basically just throw it in a trash bin and then at the end of the day, we sort through it and make sure there's no outside garbage in there," added Vrany.

That trash is picked up weekly and taken to a plant in the south suburbs where they churn it. In 100 days, it's turned into dirt and that plant sells the dirt to local construction companies for fill dirt.

Literally, everything is recycled and reused. Nothing is thrown away, and if it is, it's turned into art.

Vrany said he's trying to make the earth a better place for his children and if more people practice his three steps to recycle, compost or reuse, that goal will be met.

"We’ve served over 15,000 sandwiches in two years and had zero waste. Why can't every other quick serving restaurant be doing that?" said Vrany.
