Meatless Monday: Black-eyed pea sliders with sweet and sour slaw

Black-Eyed Pea Sliders

Ingredients:
 3 cups cooked black-eyed peas
1
½ cups cooked mashed sweet potatoes
2 tablespoons organic Tahini
1 tablespoon Spike
1 teaspoon Blackening Spice
1 teaspoon Cajun seasoning
1 teaspoon fine black pepper
2 tablespoons nutritional yeast
2 tablespoons coconut oil
Sprouted 7-grain dinner rolls

Slider Toppings:
red onion
red leaf lettuce
avocado slices
sliced tomato
organic dijon mustard
grapeseed oil vegenaise

Instructions:

In a large mixing bowl, mash the black-eyed peas. Add the sweet potatoes and seasonings. Mix well, then form slider patties using golf ball-sized scoops of the mixture. Heat oil in a large saute 
pan. Cook for about 3 minutes on each side. Assemble patty on roll with toppings and serve.

Sweet and Sour Slaw

Ingredients:

2 cups raw sweet potatoes cut into julienne strips
3 cups celery cut into julienne strips
¼ cup green onions sliced thin
2 tablespoons toasted sesame seeds
1 tablespoon orange juice
1/8 teaspoon cracked pepper
¼ cup safflower oil
2 tablespoons lemon juice
1 tablespoon agave nectar

Instructions:

In a large bowl, combine sweet potatoes with the remaining ingredients. Toss to blend.
 Chill until ready to serve.
