C.A.Y.A Smokehouse Grill's butternut squash ravioli with sage cream sauce

16 pc ravioli
1 tbl oil
¼ cup roasted tomatoes (tomatoes, salt and pepper, oil)
½ cup spinach
¼ cup cooked mushrooms
 6 oz sage cream sauce
2 tbl grated parmesan cheese

Sage Cream Sauce
½ onion diced
1 pc celery stalk diced
1 pc garlic minced
1 cup white wine
1 tbl crushed sage (fresh or dry)
4 cups heavy cream

In sauce pan sauté the onion, celery, and garlic in oil. Cook on medium heat until soft.  Add the wine and reduce by ¾. Add the sage and cream and slowly simmer until slightly thickened. Season with salt and pepper.

In a warm sauté pan add 1 tbl oil. Add the tomatoes and mushrooms and heat until warm. Add the spinach and cook through. Add the ravioli and the sauce and heat until ravioli are hot.  Add parmesan cheese and enjoy!
