Chef Chupin's BBQ & grilling tips from BBQ Butler

Executive Chef Yann Chupin displayed new dishes from Georgia's Bistro on Friday's Good Day Atlanta. He also prepared a sumptuous Niman Ranch Pork Chop with a BBQ Pork Jus.

Grilling Tips:
o    Make sure to start with a clean grill and clean grilling tools.
o    If you are using a charcoal grill, a great tip is to use your favorite or experiment with different flavored wood chips to help impart a great smoky flavor to the meat.
o    Remove the meat from the refrigerator 20 to 30 minutes prior to grilling.
o    Season the meat 15 minutes prior to grilling in order for the seasoning to be absorbed into the meat.
o    Use a brine for pork (or marinade for red meats) to make the meat extra tender. Soak the meat just before grilling to help impart the particular flavors you want and to keep it moist.
o     Always make sure that the grill is very hot before placing the meat on the grate, as that helps to keep the juices inside and also gives nice grill marks.
o    To get a good crust on the meat, you need to "manage" the grill to make sure it stays very hot – which is why you should never put a super cold steak on a very hot grill as that cools the grill too much and won't produce the desired crust.
o     Just after grilling, wrap the meat in aluminum foil for about 10 minutes to help distribute the juices.
