Alcamo's Market Sicilian Beef Spiedini:
4 - 1/8th inch slices of beef top round
Lightly season with:
Fresh Grated Romano cheese
Dry Italian herb seasoning blend
4 slices of Parma prosciutto
Italian style bread crumbs
Stuff and roll the top round with all the ingredients
On a flat surface lay the top round rolls, lined on top of each other
Use 4 ten inch skewers and place them through the rolls about a 1/4 inch apart.
Cut between the skewers , then lightly fry in a pan for approximately 5 minutes on each side.
Serve and eat.
Amoglio - Scillian Dipping Sauce:
3 to 4 fresh garlic cloves.
28oz can of San Mariano tomatoes
1 tsp of salt
2 tsp of sugar
1/2 of cup of extra virgin olive oil
1/2 tsp of black pepper
2 tsp of dry basil
1 tsp of dry oregano
1/2 bunch of fresh Italian parsley
Put garlic and parsley in a food processor first, and then blend.
Then add remaining ingredients, and then blend
Then serve with fresh Italian bread, or pour over any of your favorite meats: beef, chicken, pork, or veal.
