Meatless Monday: Sweet potatoes with black eyed peas and spinach

Get this recipe courtesy of Velonda Thompson, author of Beyond Candied Yams & Sweet Potato Pie.

Ingredients:
2 cups sweet potatoes, peeled and cubed
1 tablespoon coconut oil
1 small sweet onion, chopped
3 cups fresh spinach
2 cups black eyed peas, cooked
Herbamare

Method:
Bring a medium saucepan full of water to a boil.
Place sweet potatoes in boiling water cook until tender.
Sauté onion in oil over medium heat until tender.
Add sweet potatoes and black eyed peas.
Cook 3 minutes, folding gently.
Add spinach and stir 1 minute just to wilt.
Add Herbamare to taste and serve.

Makes 4 servings
Per serving:  approx. 7g dietary fiber and 4g protein
