Bacco's Scaloppine alla Milanese

8 pieces veal scaloppini
½ c flour
2 eggs beaten
1 c bread crumbs (seasoned with salt and pepper)
½ c olive oil
4 T butter
1 lemon
2 c arugula
1 c diced tomatoes (seasoned with s&p, olive oil, garlic, chopped parsley)

Take the veal scaloppini and lightly flour, dip in eggs, then bread crumbs, set aside.

In a large skillet, add oil and butter, when very hot add the veal and fry till golden brown on medium/high heat, turning only once. About 3 minutes per side.  

Transfer to the serving plates; squeeze fresh lemon over veal, top with arugula and tomatoes and serve with a wedge of fresh lemon.
