 Scallop Tacos from Rojo Mexican Bistro

Ingredients:

Scallops

Caramelized Onions

Swiss Chard

Roasted Tomato Sauce

Corn Tortillas

Recipe:

Saute scallops with olive oil, salt and pepper. Caramelize onions on separate pan, when finished add Swiss chard to pan with a little salt and pepper. When finished add scallops, onions and Swiss chard to a warm corn tortilla.
