Greek Shrimp Salad

Eating more fruits and vegetables is important since most Americans aren’t getting the servings needed every day for good health. Salads are a great way to fill half your plate with fruits and vegetables especially in summer when the weather is hot. Salads are easy to make and this one uses cooked shrimp to save a step and make it even easier to get a fast meal on the table that’s full of flavor.

Greek Shrimp Salad

Prep Time: 25 minutes
Cook Time: n/a
Amount: 4-6 servings

Ingredients:
1 pound frozen cooked shrimp, thawed
1 cup chopped cucumber
1 cup grape tomatoes, halved
1 cup kalamata olives, halved
1 cup chopped red onion
1 (4 ounce) package crumbled feta cheese
1/2 cup prepared Greek vinaigrette dressing
1/3 cup pine nuts, toasted
 

Directions:

 

  1. In a large bowl, combine all ingredients except pine nuts. Toss to coat.
  2. Refrigerate, covered, several hours or overnight.
  3. To serve, toss salad and sprinkle with pine nuts.
