Shrimp Bruschetta Pasta

Bruschetta is a delicious way to enjoy those summer fresh tomatoes! This pasta dish carries that favorite flavor right to the center of the plate and also takes advantage of fresh basil, which is a fragrant, delicious addition to the meal that does not require salt! The olive oil paired with the tomato in this cooked dish actually has the added bonus of additional nutrient absorption of fat soluble vitamins in the tomato, too. For a vibrant meal with taste and texture, pair this dish with a crisp green salad. The cool, crunchy greens will balance out the warmth and texture of pasta.

Shrimp Bruschetta Pasta

 

Prep Time: 10 minutes
Cook Time: 10 minutes
Amount: 4 servings

Ingredients:
8 ounces Jewel® Angel Hair Pasta
¼ cup Jewel® Olive Oil
1 pound Arctic Shores® Uncooked Peeled & Deveined Shrimp
2 tablespoons chopped garlic
1 medium tomato, seeded, diced
½ cup Jewel® Shredded Parmesan Cheese
¼ cup chopped fresh basil

Directions:

  1. Prepare pasta according to package directions; drain.
  2. In large skillet, heat oil over medium-high heat. Sauté shrimp and garlic until shrimp is opaque and cooked through (about 6-8 minutes). Salt and pepper to taste.
  3. Toss shrimp with pasta, tomatoes, cheese and basil. Salt and pepper to taste.
  4. Garnish with additional cheese and basil sprigs, if desired.
