Cucumbers are a refreshing treat in the summertime! Pair them up with chicken and a tasty Thai sauce, and you have a delicious dish that will impress guests and provide several food groups for balance, too.
Thai Chicken Cucumber Bites

2 cups cooked and finely chopped wild harvest® Natural Boneless, Skinless Chicken Breasts
½ cup bottled Thai peanut sauce
½ cup shredded wild harvest® Organic Carrots
¼ cup chopped wild harvest® Organic Green Onions
¼ cup chopped peanuts
2 tablespoons chopped wild harvest® Organic Fresh Cilantro
2 teaspoons toasted sesame seeds
1-2 medium cucumbers, sliced into 36 (¼-inch thick) slices
1. In medium bowl, combine all ingredients except cucumber slices. Toss until well combined.
2. Top each cucumber slice with chicken mixture. Garnish with additional chopped peanuts or toasted sesame seeds.
3. May be prepared and assembled several hours ahead. Refrigerate, covered, until ready to serve.
