As you continue to enjoy the summer, recipes that use favorite grilled foods and “taste of the season” favorite fruits and veggies wisely are a must! If they can travel to picnics or backyard gatherings at friends, that makes them even better! Check out this tasty recipe that uses grilled chicken – a great menu for a grill out, or to enjoy the grilled chicken left from the night before. The walnuts provide omega 3’s and crunch along with the sweetness of grapes – plus, when you pair fruit with deep greens, the flavors balance nicely and provide loads of nutrients in every sandwich.

Chicken Salad Pitas

Amount: 6 servings

Ingredients:
¼ cup light mayonnaise
¼ cup Jewel® Plain Non-Fat Yogurt
1 tablespoon Jewel® Spicy Brown Mustard
1 tablespoon Jewel® Lemon Juice
2 cups cooked and chopped Jewel® Boneless, Skinless Chicken Breasts
½ cup red seedless grapes, cut in half
¼ cup diced celery
¼ cup chopped walnuts
6 whole wheat pita pocket halves
6 lettuce leaves
6 tomato slices

Directions:

  1. In medium bowl, combine mayonnaise, yogurt, mustard and lemon juice; salt and pepper to taste.
  2. Add in chicken, grapes, celery and walnuts. Toss to coat.
  3. Place lettuce and tomato slices in pitas; fill with chicken salad.
