Beans are a nutritional workhorse – they provide carbohydrates and protein, along with fiber and a nice mix vitamins and minerals, too – for a nice price. This recipe makes beans a party-friendly treat that guests will love. They won’t necessarily know you are providing a nutritious dish that fits great in a well planned menu – they’ll just that they like it!

Bean Salsa
Prep Time: 15 minutes
Chill Time:
several hours
Amount: about 5½ cups

 

Ingredients:
2 (15 ounce) cans wild harvest® Organic Pinto Beans, rinsed and drained
½ cup each diced red, green and yellow bell peppers
1 cup diced red onion
¼ cup wild harvest® Organic Extra Virgin Olive Oil
¼ cup red wine vinegar
2 tablespoons wild harvest® Organic Honey
1½ teaspoons finely ground wild harvest® Natural Sea Salt
1 teaspoon wild harvest® Organic Ground Cumin
½ teaspoon chili powder
- wild harvest® Organic Tortilla Chips

Directions:
1. In large mixing bowl, combine all ingredients. Salt and pepper to taste.
2. Cover and refrigerate several hours or overnight. Serve with tortilla chips.
