Sweet Potato Streusel

Here is a fun twist on a classic dish that can be made in advance to take off some of the party day stress! Added marshmallows and sugar are kept to reduced portions to help with the overall dish – a delicious way to have some fun with sides! Remember to include a walk after dinner to help burn off some extra calories! It’s a great way to enjoy the crisp fall air, and time with family, too!

Sweet Potato Streusel

Prep Time: 10 minutes
Bake Time: 65 minutes
Amount: 8 servings

 

Ingredients:
4 large sweet potatoes or yams
½ cup Jewel® Butter, softened
½ cup firmly packed Jewel ® Brown Sugar
½ cup Jewel ® All-Purpose Flour
½ teaspoon Jewel ® Salt
¼ teaspoon Jewel ® Ground Cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg
1 cup pecan pieces
1 cup Jewel ® Mini Marshmallows

Directions:

  1. Bake potatoes in a preheated 400°F oven for 45 minutes or until easily pierced by a fork. Cool slightly. Reduce oven to 350°F.
  2. Peel potatoes and slice into 1-inch slices. Layer in a 13x9-inch baking dish that has been sprayed with Jewel ® No-Stick Cooking Spray. Set aside.
  3. In large bowl combine butter, sugar, flour, salt, cinnamon, ginger and nutmeg. Mix until well combined. Mix in pecans and marshmallows. Sprinkle mixture over the potatoes.
  4. Bake in 350°F oven 20 minutes or until golden brown and bubbly.

Do Ahead Tip: Top completely cooled potatoes with streusel and refrigerate, covered, up to 1 day ahead. Add 10-15 minutes to baking time.
