
Turkey recipes are another fall favorite. This one takes advantage of the crisp in-season apples that are so plentiful this time of year. By using reduced fat blue cheese and an awesome “do it yourself dressing” , this gourmet salad tastes like it should be served in a high-end restaurant. Who knew leftover turkey, apples and cranberries could be so tasty?

1/4 cup wild harvest™ natural cranberry juice
1 tablespoon white wine vinegar
1 tablespoon wild harvest™ organic Dijon mustard
- dash ground white pepper
1 tablespoon wild harvest™ organic extra virgin olive oil
12 ounces wild harvest™ organic romaine lettuce, torn
1 pound roasted turkey breast, torn into bite size pieces
1 large apple, cored, sliced
4 ounces reduced fat blue cheese crumbles
1/2 cup dried cranberries
1/2 cup raw almonds, chopped
1/4 cup sliced shallots
