Grilled Goat Cheese Crostinis

Ingredients:
1 large red onion, chopped
1 tablespoon wild harvest® Organic Extra Virgin Olive Oil
1 loaf baguette bread, sliced diagonally (18 slices)
- wild harvest® Organic Extra Virgin Olive Oil
1-2 garlic cloves, peeled
7 ounces soft goat cheese, room temperature
2 tablespoons chopped wild harvest® Organic Fresh Chives
- Honey
1 (3 ounce) package sliced prosciutto, cut into 18 pieces

Directions:

  1. In medium skillet, over medium-low heat combine onions and 1 tablespoon oil. Cook until onions are golden brown and caramelized (about 20 minutes), stirring occasionally. Remove from heat; allow to cool to room temperature (can be made a couple hours ahead).
  2. Meanwhile, prepare grill to medium heat. Brush both sides of baguette slices with olive oil. Place on grill; grill until both sides are lightly browned. Remove from grill. Pierce garlic clove with a fork; using fork, rub each baguette slice with garlic clove. Set aside to cool (can be made a couple hours ahead).
  3. In small bowl, combine goat cheese and chives. Spread over baguette slices. Drizzle with honey; top with prosciutto slice and caramelized onions.
