Turkey Cherry Pasta Salad

Everyone loves leftover turkey! Here’s a new healthier twist on a tasty crisp salad – a nice break from all the heavy holiday foods. Even better - you can make it ahead so when you come home tired from holiday shopping, it’s a delicious balanced meal with pretty much every food group present. Walnuts provide Omega-3s for the heart and those veggies and cherries layer nutrients right into every forkful. One bowl meals? A very stress-free way to eat better this holiday season.

Prep Time: 30 minutes
Chill Time: several hours or overnight
Amount: 10 (1 ½ cup) servings

Ingredients:
1 (12 ounce) package Jewel ® Farfalle Pasta
3 cups torn up leftover turkey (12 ounces)
1 cup chopped celery
½ cup chopped red onion
1 (6 ounce) package dried cherries
½ cup Jewel ® Low Fat Plain Yogurt
¼ cup light mayonnaise
¼ cup low fat buttermilk
2 tablespoons Jewel® Red Wine Vinegar
1 tablespoon wild harvest® Dijon Mustard
2 teaspoons poppy seeds
1 teaspoon Jewel® Salt
½ teaspoon Jewel® Black Pepper
½ cup chopped walnuts, toasted

Directions:

  1. Prepare pasta according to package directions; drain. Rinse with cold water until cooled; drain well.
  2. Place cooled pasta in a large bowl; add turkey, celery, onion and cherries.
  3. In small bowl, combine yogurt, mayonnaise, buttermilk, vinegar, mustard, poppy seeds, salt and pepper; whisk until well combined. Toss with pasta until well coated.
  4. Refrigerate, covered, several hours or overnight. Add walnuts and toss just before serving.
