Rice Pudding

Rice pudding is another classic recipe that is actually both comforting and easy to make. We switched things up to keep it interesting – this one is made with rice milk! Because we chose the vanilla flavored rice milk, it adds an additional layer of flavor. Check out the nutritionals too – 1 gram of fat per serving. Easy prep makes this a festive and friendly recipe for the holidays with less stress in the kitchen.

Rice Pudding

Active Time: 15 minutes
Total Time: 40 minutes
Amount: 8 servings

Ingredients:
2 cups water
1 cup short grain rice
3 cups wild harvest® Organic Vanilla Ricemilk
? cup wild harvest® Organic Cane Sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon sea salt

Directions:

  1. In medium saucepan, bring water to a boil; add rice. Cover and simmer until rice is al dente (about 20 minutes).
  2. Meanwhile, in large mixing bowl, whisk milk, sugar, cinnamon, nutmeg and salt until well combined.
  3. Stir milk mixture into cooked rice. Simmer until thick and creamy (about 15-20 minutes).
  4. Remove from heat; serve warm.
