
Happy New Year’s! If lobster is a favorite for this special night, but you are preparing for a large gathering, you will love this easy and elegant sandwich! The smaller buns and nice mix of better for you ingredients keeps each slider around 240 calories – an easy fit for a party food. These tasty tidbits come together quickly so you can get back to your guests fast.

Cook Time: 10 minutes
Amount: 8 sliders
Ingredients:
½ cup Jewel® Light Mayonnaise, divided
1 teaspoon chopped fresh tarragon
1 teaspoon Jewel® Dijon Mustard
¼ + ? teaspoon cayenne pepper, divided
¾ cup Japanese-style Panko bread crumbs
¼ cup chopped green onions
1 Jewel® Large Egg, slightly beaten
8 ounces cooked lobster meat, chopped
1 tablespoon Jewel® Butter
1 tablespoon Jewel® Olive Oil
8 silver dollar buns, toasted
- tomato slices
- lettuce
Directions:
1. In small bowl, combine ¼ cup mayonnaise, tarragon, mustard and ? teaspoon cayenne pepper; set aside.
2. In medium bowl, combine remaining ¼ cup mayonnaise, bread crumbs, green onions, egg and remaining ¼ teaspoon cayenne pepper until just combined. Salt and pepper to taste. Gently fold in lobster meat. Shape into 8 mini lobster cakes. Set aside.
3. Heat large skillet over medium heat. Add butter and oil; when sizzling, carefully add lobster cakes. Sauté until golden brown on both sides (about 3-4 minutes).
4. Place on toasted buns and top with a dollop of Dijon tarragon sauce, tomato and lettuce.
