Spaghetti with Scallops

Seafood is simple – with the right recipe! Try this fast recipe that looks beautiful and tastes just as good. Notice the great, colorful veggies built right into the dish – a balanced meal in 20 minutes? No problem. It also tastes great with a whole grain pasta.

 

Prep Time: 10 minutes

Cook Time: 10 minutes

Amount: 4 servings

Tips & suggestions: Substitute 1 package Arctic Shores™ shrimp for 1 package scallops, if desired.

 

Ingredients

8 ounces spaghetti pasta

1 tablespoon extra virgin olive oil

1/2 cup diced yellow bell pepper

1 cup diced zucchini

1 tablespoon minced garlic

1 teaspoon salt

1/2 teaspoon black pepper

12 ounces Arctic Shores™ frozen bay scallops, thawed, rinsed and drained

1/4 cup dry white wine

1 medium Farm Stand® tomato, seeded and chopped

1/2 cup finely shredded Parmesan cheese

 

Directions

  1. 1. Prepare pasta according to package directions; drain.
  2. 2. Meanwhile, in large skillet, heat oil over medium-high heat. Sauté bell peppers, zucchini, garlic, salt and pepper until zucchini is soft (about 5 minutes).
  3. 3. Add scallops; sauté until opaque (about 2-3 minutes).
  4. 4. Add wine and tomatoes; toss with pasta and Parmesan cheese.
