Cajun Bites with Horseradish Dipping Sauce

Here’s a simple way to serve beef smart. Portion controlled with a dipping sauce on the side so your guests can monitor their intake and maintain their New Year’s Resolutions! This is a tasty treat that works great when entertaining, but pair it up over mixed greens and your favorite veggies and you have a tasty, restaurant quality salad for a meal!

  

Prep Time: 15 minutes

Cook Time: 5-7 minutes

Amount: 8 appetizer servings

 

Ingredients

1/2 cup sour cream

1/4 cup light mayonnaise

1/4 cup prepared horseradish

1 tablespoon chopped fresh chives

1 teaspoon chopped garlic

1 teaspoon garlic powder

1/2 teaspoon sea salt

1/2 teaspoon black pepper

1/2 teaspoon onion powder

1/2 teaspoon cayenne pepper

1/2 teaspoon dried thyme leaves

1 pound Stockman & Dakota™ whole beef tenderloin, cut into 24 cubes

- 8 wooden skewers, cut in half, soaked in water 30 minutes

 

Directions

  1. In medium bowl, combine sour cream, mayonnaise, horseradish, chives and garlic; salt and pepper to taste. Set aside.
  2. Prepare grill to medium heat. Combine garlic powder, salt, pepper, onion powder, cayenne, oregano and thyme in medium bowl. Toss tenderloin cubes with seasoning. Place 3 cubes on each half skewer.
  3. Place skewers on grill. Grill, turning occasionally, 5-7 minutes or until desired doneness is reached (145°F for medium-rare; 160°F for medium).
  4. Remove from grill and place on platter. Serve with horseradish sauce.
